I never forego the opportunity to indulge on a holiday meal –and this Easter was no different. While my traditional Easter celebration boasts a wide variety of family-founded recipes, I decided to try something a bit different this year.
Coupled with my love for Spanish cuisine and weekly experimentation with tapas, I tried my hand at Cordero Asado – Roasted Lamb – this Easter. With an adapted recipe from Claudia Roden’s,The Food of Spain, I spent my morning infusing olive oil with herbs and planning a meal to remember.

Cordero Asado
Ingredients for the Lamb:
Rack of lamb (about 5-6 cutlets)
Salt
Pepper
Rosemary
Thyme infused olive oil
Put all ingredients in a pan over medium-high heat. Cook for 3-4 minutes per side and serve medium rare.
Ingredients for Judías Verdes:
Green Beans
Cherry Tomatoes
Olive Oil
Garlic
Salt & Pepper to taste
In a pan, cook over medium heat.
Ingredients for Roasted Tomatoes:
Cherry Tomatoes (you can get a variety of choice)
Olive Oil
Sugar
Salt & Pepper to taste
Place all the ingredients on a pan covered with parchment paper. Roast in the oven at 350 degrees until juicy.
